Chocolate, Chestnut and Orange Cake

Ingredients
150g 70% dark chocolate, chopped
150g butter
6 eggs
60-90g raw caster sugar (depending on the sweetness of the Chestnut Puree)
180g chestnut puree
75g flour
1tsp baking powder
50g 70% dark chocolate, chopped
50g milk chocolate, chopped
1 orange, peeled and sliced
Little raw sugar to caramelize the top
Method
Preheat the oven to 180°C.
Gently melt together the butter and 150g of chocolate. Set aside to cool slightly.
Separate the eggs and whisk together the egg yolks, half the sugar and the chestnut puree until light.
Mix in the flour and baking powder. Slowly add the cooled chocolate mixture.
Create a meringue with the egg whites and the remaining sugar.
Gently fold meringue into the chocolate chestnut mixture in three stages to keep the mixture light.
Last fold in the remaining chopped chocolate.
Place batter into the springform.
Bake for approximately 35 - 40 minutes. Allow to cool.
To finish, peel and slice the orange. Top the cake with orange slices. Sprinkle with raw sugar and caramelize with a brûlée torch.
Alternatively you can brush the top with some slightly warmed apricot jam.
Finish with chocolate shards.
