Oyster Omelette

Ingredients

2 tbsp vegetable oil

20g sweet potato flour

1 tsp corn or rice flour

3 eggs

8 oysters, freshly

1 tsp fish sauce

1 tsp light soy sauce

Pinch of white pepper

1 bunch of garlic chives, cut into 3 cm batons

½ tsp chilli condiment, plus ½ tsp to serve

Method

Mix together the flour with 80ml water.

Heat a large pan over a high heat and add the oil. Using a small ladle add the batter a spoonful at a time allowing the batter to sizzle and set. Let the batter cook for 3 - 4 minutes then flip and fry on the other side for a minute.

Whisk the eggs and pour over the sweet potato pancake. Swirl the pan and then using two wooden spoons break up the batter and egg together into large chunks.

Push the mixture to one side in the fry pan and add the oysters to fry up. Flavour the oysters using the fish sauce, soy sauce, white pepper, chilli condiment and chives. Toss the cooked egg mixture and warm oysters through.

Serve omelette with more chilli condiment.
