Mini Banana Pikelets

Ingredients

2 bananas, cut into 2 cm rounds

1 egg

½ cup buttermilk

½ cup of self-raising flour

½ tsp bicarb soda

Vegetable oil, for frying

Maple syrup

Method

Whisk flour with the bicarb soda and a pinch of salt. Add one egg and gradually add the buttermilk, whisk together until a thick batter forms.

Dip the banana pieces into the batter ensuring to coat them on each side.

Heat a crepe pan with vegetable oil over a medium heat and when the oil is hot, cook the battered banana pikelets on both sides until golden brown.

Serve with maple syrup.
