Glazed Ham

Ingredients

5kg ham leg on the bone, room temperature

Glaze
160g brown sugar
¼ cup Dijon mustard
1 tsp. hot English mustard
50ml apple cider vinegar
Juice and zest of 1 orange
1tsp. all spice

Cloves, garnish

Method

Pre-heat your oven to 180C.

Carefully peel back the skin of the ham and with your hands ensuring the fat is kept intact. Using a small knife score a crisscross pattern in the fat. Stud the ham with the cloves and place the ham on a large baking tray that fits in your oven.

In a small saucepan heat the ingredients together whisking to combine well.

Using a pastry brush, brush the ham liberally with the glaze. Bake in the oven for 1 ½ hours checking it every 20 minute to ensure it does not burn and to baste again.

Rest for 30 minutes before carving.
