Gingerbread

Ingredients

115g butter, softened
100g sugar
160ml golden syrup
1 egg
400g of plain flour
Pinch salt
2 tsp ground ginger
1 tsp cinnamon
½ tsp clove
1 tsp. baking powder

1 packet of ready to roll out icing
5 pack coloured writing icing

Method

Pre heat the oven to 180C. Combine all the dry ingredients in a bowl. Beat the butter and sugar in a mixer until it is light and fluffy. Now add the golden syrup and egg and beat again. Finally mix through the dry ingredients until a dough forms. Place on a chopping board, then cut into half, wrap in clingfilm and refrigerate for 1 hour. Roll the pastry out until you have a 4 mm thickness. With a gingerbread man shaped cookie cutter, cut out shapes and place on a baking tray. Bake in the oven for 10-12 minutes. Remove from the oven and cool completely. Roll out the ready to roll icing to a 2mm thickness and with the same cookie cutter cut out the shapes. With writing icing, glue the icing to the gingerbread. Using the coloured writing icing decorate the gingerbread men.
