Fetta Wrapped in Brick Pastry with Honey

Servings makes 8 wraps

Ingredients

2 x blocks Greek fetta (approx. 300g), cut into 4 sticks, lengthways

4 sheets of brick pastry

Olive oil, for shallow frying

¼ cup honey, for drizzling

2 sprigs thyme, leaves picked

2 tbsp pistachios, chopped to serve

Method

Cut the brick pastry sheets in half and tightly wrap each fetta stick into each half.

Heat oil in a pan over a medium to high heat. Fry fetta pastry sticks in the oil until golden and crispy on all sides. Drain on a rack and cool slightly.

In a small saucepan, on medium heat, simmer the honey and thyme leaves for 1 - 2 minutes.

To serve, place the crispy fetta sticks on a plate and drizzle warm thyme honey and top with chopped pistachios.
