Wonton Soup

Ingredients
2L chicken
1 star anise
1 cinnamon stick
1 tbsp soy sauce
2 tbsp shaoxing wine
1 tbsp sugar
3 cm piece of ginger, finely sliced
6 springs onions, trimmed, plus extra finely chopped to serve
Wontons
200g chicken mince
2 tsp finely grated ginger
1 garlic clove, finely chopped
½ tsp sesame oil
1 tbsp soy sauce
½ tsp Chinese five spice
½ egg white
16 square or round wonton wrappers
1 tbsp cornflour
Method
Add the stock, spices, soy sauce, shaoxing wine, sugar, ginger and spring onion to a large pot. Bring to the boil, turn the heat down to low and simmer for 40 minutes.
To make the wontons. Place the chicken in the bowl and add the ginger, garlic, sesame oil, soy, five spice, egg white and cornflour. Mix well to form a sticky paste.
Place the wonton wrappers on a clean work surface. Spoon 1 teaspoon of the chicken mixture into the centre of each wrapper. Brush the wonton edges with the water. Fold the wrapper over the filling and press gently around the edges to seal and remove any air bubbles. Place the wontons on a tray lined with baking paper and cover with a clean tea towel, so they do not dry out.
Bring a pot of water to the boil and carefully add the wontons and cook for 3 – 5 minutes. Strain the soup through a fine sieve into individual bowls. Using a slotted spoon add wontons to the soup and serve with spring onions.
