White Bean Soup

Ingredients
2 cups dried cannellini beans (if using canned beans, ensure no other gluten ingredients have been added)
1 leek, white part only, finely chopped
1 stick of celery, diced (heart of the celery reserved for garnish)
150g of celeriac, diced
1L vegetable stock (gluten free option)
Salt and pepper
Parsley, leaves for garnish
This recipe uses the Tefal Multicook & Grains.
Method
To soak the beans (but not cook them), put them in the Tefal multicook bowl, set beans program no.6, normal texture (automatic cooking time), with the quantity of water indicated on the screen. At the end of the soaking process, drain the beans and cancel program no.6.
Put the drained beans in to the multicook bowl, add all the vegetables and then pour in the stock and lightly season. Cook on soup program no.15 for 40 minutes.
Check seasoning before serving. Garnish with the leaves of the celery heart and parsley.
