Warm Vanilla Custard with Red Berries

Ingredients

1 punnet of strawberries, tops removed, chopped 

1 punnet of raspberries

Orange liquor (optional) 

100g crème fraiche

¼ cup icing sugar 

½ tsp vanilla bean paste 

Custard

500ml milk

4 egg yolks

½ cup caster sugar

2 tbsp cornflour 

1 tsp vanilla bean paste, seeds scraped 

Method

Heat milk and vanilla in a pot over a medium heat. In a bowl, whisk together egg yolks and cornflour until smooth. Add the caster sugar and whisk until light and fluffy. Add a splash of the milk to the mixture, whisk until incorporated. While whisking continuously, pour in the remaining milk and whisk until combined.

Pour the custard mixture into a clean pot over medium-low heat. Cook, stirring constantly, until thick. Pour into a bowl and set aside.

Combine the red berries in a bowl with orange liquor and a teaspoon of icing sugar.

In a bowl, whisk creme fraiche, icing sugar and vanilla until stiff peaks.

Place the berries into a serving bowl, drizzle with custard and top with whisked cream fraiche. Serve.
