Waffles with Brown Cheese

Cook Time 30 minutes

Serves 4

Ingredients

2 eggs

3 tbsp caster sugar

400ml buttermilk

300g plain flour

1 tsp baking powder

¼ tsp bicarbonate soda

Pinch of salt

Milk or water, to loosen the batter (optional)

50g melted butter, plus extra for greasing

To Serve

Strawberry jam, to serve

Sour cream, to serve 

Sliced brown cheese (brunost), to serve (optional)

Method

Whisk eggs and sugar together until pale and slightly fluffy. Add the buttermilk and mix well.

Mix in the flour, baking powder, bicarbonate of soda and salt until smooth. It should be thick but pourable - like a loose pancake batter. If too thick, add a splash of milk or water.

Rest batter for 10–15 minutes if you have time (makes them lighter).

Heat the waffle iron and lightly butter it. Ladle in enough batter to cover the iron's base. Cook until golden and lightly crisp on the outside.

Serve with jam, cream and brown cheese.
