Vegetarian Stuffing

Ingredients
2 large handfuls fresh breadcrumbs
1 tbsp vegetable stock powder
¼ chopped mixed nuts
1 large onion, finely diced
25g butter
150g cheese of your choice, grated
1 lemon, zested
Method
In a hot pan heat the butter and cook the onions with the stock powder, stirring together until the onions have softened. Add the nuts and turn off the heat.
Place the breadcrumbs into the pan and stir the mixture until combined well. Add the zest and the cheese and mix together.
Use the stuffing to flavour and stuff a chicken of any vegetable of your choice.
