Ultimate Tuna Melt Toastie

Servings makes 2 toasties

Ingredients

For the Tuna Mix

1 x 425g tin Tuna, drained

¼ cup kewpie mayo

¼ cup creme fraiche 

1 tbsp Dijon mustard

1 tbsp baby capers, rinsed and chopped

¼ small red onion, finely diced

Zest and juice of ½ lemon

1 tbsp chives, finely chopped

1 tbsp dill, finely chopped

Good pinch of salt and pepper

Other

1 cup cacio chilli cheese, grated

4 slices sourdough bread

50g softened unsalted butter

Method

Place all tuna mix ingredients into a bowl and mix to combine.

To build the toasties, butter the outsides of the bread, add half the tuna mix to two slices of sourdough and sprinkle the cheese on top. Place the lid on and cook toasties in a frying pan or sandwich press until golden and crispy on both sides.

Serve with a sprinkle of salt on top.
