Twice-cooked Whole Chicken
Cook Time 45 minutes
Ingredients
1 tsp extra virgin olive oil
1 x (1.2-1.5kg) whole chicken
1 cup peas
½ punnet cherry tomatoes
8 cloves garlic
1 tsp dried oregano
Juice 1 lemon
1 cup chicken stock
Salt & pepper
Method
Place the peas, tomatoes, garlic, oregano, lemon juice, pinch of salt and stock into the pressure cooker bowl. Oil and season the chicken all over. Pressure-cook for 30 minutes.
Open lid and replace with the Extra Crisp Lid. Brush chicken with a little of the cooking juice and crisp up for 15 minutes or until golden. Alternatively, if cooking under the grill in the oven, remove the chicken carefully from the pot, place on a tray and grill until golden.
