Tuna Tortilla Wrap Stack

2 large soft burrito tortilla wraps

1 handful of grated mozzarella

2 spring onions, finely chopped

2 x (185g) tuna in spring water, drained

2 tbsp. mayonnaise

½ can black beans, drained and rinsed

1 corn on the cob, chargrilled on the BBQ, kernels cut off the cob

½ punnet of cherry tomatoes, halved

Juice ½ lime

1 handful of spinach leaves

Salt & pepper

Combine the tuna with spring onions and mayonnaise.

In another bowl make a salsa of beans, corn and cherry tomato, lime juice and salt and pepper.

Cut a slit down from the centre of the tortilla. In one quarter of the tortilla add the mozzarella. The tuna mixture in the second and salsa in the third. Fold the wrap on itself, starting from the bottom quarter to a triangle.

Place in a warm pan and toast on each side for a few minutes before serving.
