Tuna Poke Bowls

Ingredients
1 ripe avocado
1 tsp matcha powder
2 tbsp chilli sauce
1 tbsp soy sauce
½ tsp sesame oil
Juice of 1 lime
200g tuna sashimi, cubed
2 cups cooked quinoa
Pickled ginger, Julienne
1 cucumber, diced
1 small handful of edamame, defrosted and outer layer removed
½ bunch spring onions, finely sliced
Black sesame seeds, to garnish

Method
In a food processor, blitz the avocado, matcha powder, chilli sauce, sesame oil and lime juice. To thin out the sauce add two tablespoons of water.
To assemble the poke bowl, place quinoa in four separate bowls. Add the ginger, cucumber, edamame, tuna and spring onions. Drizzle over avocado sauce and sprinkle with black sesame.
