Tuna Dan Dan Noodle Salad

Ingredients
2–3 packs of instant ramen noodles, discard seasoning
1 small bunch of Chinese broccoli, chopped
1 x 185g can of tuna in spring water, drained
2 spring onions, finely sliced
1 tsp sesame seeds
Sauce
2 tbsp tahini
1 tbsp light soy sauce
1 tbsp Chinese black vinegar
1 tbsp crispy chilli oil
1 tsp sesame oil
1 tsp sugar
1 tsp freshly grated ginger
2 tbsp hot water
½ tsp ground Sichuan pepper (optional)
Method
For the sauce, whisk everything together with hot water. It should be of drizzling consistency.
Cook the noodles along with the Chinese broccoli until just tender, then rinse under cold water.
Add to a salad bowl with tuna and spring onions. Pour over the sauce and toss everything together. Garnish with sesame seeds.
