Triple the Chocolate Goodness Muffins

Ingredients

2 eggs

1½ cups Greek yoghurt 

1 cup vegetable oil 

2 cups self-raising flour

1 cup caster sugar

½ cup cocoa powder

1 tsp bicarbonate of soda

1 cup milk chocolate chips

1 cup dark chocolate chips

Icing

½ cup pouring cream

1 cup dark chocolate chips

Method

Preheat your oven to 180°C fan-forced and line 2 x 12-hole regular muffin tins with 16 paper cases (I stacked 2 cases on top of each other for extra lining, you’ll need 32 cases all up if you do that). We’re about to bake some chocolate magic!

In a large bowl, whisk together the eggs, yoghurt, and oil until smooth. This is where the deliciousness begins. Add the flour, sugar, cocoa, bicarb soda, and both types of chocolate chips to the bowl. Stir until everything is just combined.

Fill the muffin cases until they are about three-quarters full, making sure each one is packed with chocolatey goodness.

Bake for 20 minutes or until a toothpick inserted into the centre comes out clean. Your kitchen will be filled with the irresistible aroma of chocolate!

While the muffins are baking, it’s time to whip up the icing. In a microwave-safe bowl, heat the cream and dark chocolate chips together for 2 minutes. Stir until the mixture is smooth and glossy, then let it cool.

Once the muffins and icing are cool, spread the icing generously on top of each muffin. Now, get ready to enjoy triple the chocolate bliss!
