Tikel Gomen - Ethiopian Cabbage and Carrot Dish

Cook Time 30 minutes

Servings 4-6

Ingredients

½ cabbage 

3 carrots 

1 red onion, sliced

5 cloves garlic, crushed

1 inch ginger, grated

Black pepper

½ tsp coriander roasted and ground seeds 

½ tsp turmeric 

Injera, to serve

Method

Chop carrots into large batons and rinse. Slice cabbage into 2x6 cm strips.

Fry onions on high heat until fragrant, then add garlic and ginger. After a couple of minutes add turmeric, ground coriander seeds and black pepper.

Once caramelised add half a cup of water followed by carrots. Let carrots cook for roughly 5 minutes before adding cabbage.

Once cabbage has been added, turn the heat to low and continue to stir to ensure it all cooks evenly. After roughly 5 minutes of cooking on low heat, turn heat off and add salt to taste.

Serve on top of injera.
