Parisian Mushroom Salad

Ingredients

250g small super fresh button mushrooms 

2 hard boiled eggs

1 head baby cos lettuce

100g block of Comte cheese, cubed

4 slices ham, finely sliced

Dressing 

Seeded mustard

1 tbsp white wine vinegar  

1 clove garlic, minced

3 tbsp olive oil

Method

Arrange cos lettuce in a shallow bowl. Add the comte cheese to the lettuce followed by the sliced ham. Quarter the hard boiled egg and add to the salad.

Combine the dressing ingredients in a bowl and whisk together.

Slice the mushrooms and then place on the salad. Top with the dressing.
