Thai Stir Fried Prawns

Ingredients

2 tbsp vegetable oil

8 large green prawns, peeled and deveined with tail intact

1 onion, sliced

1 large handful of unsalted cashew nuts

1 bird’s eye chilli, chopped

1 bunch Thai basil, leaves picked

Steamed jasmine rice, to serve

Sauce

1 tbsp oyster sauce

1 tbsp soy sauce

1 tsp fish sauce

1 tbsp brown sugar

Method

Heat wok over a high heat. Add the oil and coat wok then add the prawns, followed by the onions. Fry and toss for no more than a minute before adding the sauce, followed by the nuts, chilli and Thai basil.

Serve prawns with steamed jasmine rice.
