Thai Curry Prawn Sandwich

Ingredients

500g prawns, shelled and deveined

1½ tbsp cornflour

¼ cup breadcrumbs

1 egg

1 tbsp Thai yellow curry paste

3 spring onions, roughly chopped

1 tsp fish sauce

Vegetable oil, for frying

Baby cos lettuce leaves

Coriander, to serve

1 lime, juiced

4 soft long bread rolls, halved lengthways

Mayonnaise, to serve

Sweet chilli sauce, to serve

Method

In a food processor, pulse the prawns, cornflour, breadcrumbs, egg, curry paste, spring onions, and fish sauce until it becomes a paste-like consistency. In a large non-stick fry pan, heat the oil on medium heat. Using wet hands, shape prawn mince into patties. Carefully place patties into the frypan and fry for 1-2 minutes on both sides until lightly golden brown. Drain on some paper towel, squeeze over lime and season with salt. Set aside.

To assemble, spread mayonnaise and sweet chilli sauce on both sides of the roll, add prawn patties, lettuce, coriander and sandwich together and serve.
