Ingredients

4 cobs of corn ⁣kernels

⅓ cup of milk ⁣

1 tbsp of papelon, sugar cane or brown sugar

A pinch of salt ⁣

80g flour, or more if required

10g butter ⁣

125g burrata, mozzarella or fetta, tear into small pieces

Nata

A Spoonful of sour cream

Juice of ½ lemon

Salt

Method

Add ingredients in a blender except (butter & cheese) and blend until combined, leaving some corn still intact.⁣

Heat the fry pan over medium heat and melt the butter.⁣

Add 1/2 cup of mixture in the fry pan and cook like a pancake for around 5 minutes and add the cheese. Fold in half and continue to cook for 2 minutes until both sides are golden brown.

For the Nata, mix all ingredients in a bowl.

⁣Serve with butter, cheese & Nata.
