Tasty Tomato Bruschetta

Serves 2

Ingredients

250g grape tomatoes, diced

½ tsp Dijon mustard

1 tbsp balsamic vinegar

2-3 tbsp extra virgin olive oil, plus extra to drizzle

½ clove garlic

½ bunch chives, chopped 

2-4 slices of ciabatta bread, toasted

Salt and pepper, to taste

Method

In a bowl, whisk together the Dijon mustard, vinegar, and extra virgin olive oil. Season with salt and pepper.

Add the diced tomatoes and chopped chives, then toss gently to coat in the dressing.

To serve, rub a cut clove of garlic over toasted bread, then drizzle with a little extra olive oil. Spoon the tomato mixture over the bread and serve.
