Ingredients
2 tbsp tarama paste (white salted cod roe)
1 cup loosely packed stale bread
Juice of 2 lemons
80ml cold water
¼ brown onion
1 ¼ cups neutral oil (grapeseed, canola or vegetable oil)
Pita, to serve
Method
To begin, soak the bread well in the water and lemon juice. Once absorbed, add the bread, onion and tarama paste to a food processor and blitz until very smooth.
Gradually add the oil, mixing continuously to emulsify until thick and whipped.
Serve with warm pita.
