Stir-fry Chicken in Plum Sauce

Cook Time 30 minutes

Serves 4

Ingredients

2 tbsp peanut oil

500g chicken thigh fillets, thinly sliced

2 cloves garlic, finely sliced

1 tsp grated ginger

1 red capsicum, sliced

1 onion, sliced

2 large handfuls of spinach


Plum Sauce Mix

⅓ cup plum sauce

1 tbsp dark soy sauce

1 tbsp rice vinegar 

1 tbsp light soy sauce

Method

Mix the plum sauce ingredients together.

Heat oil in a hot wok over high heat. Add chicken in batches and stir-fry until golden. Remove and set aside.

Add onion, capsicum, garlic, and ginger. Stir-fry for 2–3 minutes, then return chicken to the pan. Pour in plum sauce mix. Add the spinach and toss on a high heat until everything is coated, about 1-2 minutes.

Serve with rice.
