Steamed Cod in Soy & Ginger Broth

Ingredients

1 large knob ginger, peeled
2 shallots, halved
400ml chicken stock
2 star anise
1 tsp black peppercorns
3 tbsp soy sauce
2 tbsp caster sugar
3 drops sesame oil
2 x 180g cod fillets
1 bunch bok choy

Method

Roughly chop one knob of ginger and place in the Cuisine Companion (or a saucepan on the stove) with the shallots, chicken stock, star anise, peppercorns, soy, sugar and sesame oil. Bring to a simmer for 5 minutes.

In a steamer basket, place the bok choy on one level and the cod, skin-side down, on the level above the bok choy. Place the steamer above the broth, cover with a lid and steam for about 7 minutes until just cooked.

Layer the bok choy on the bottom of a bowl with the cod on top. Pour over warm broth to serve.
