Squid Confit

Ingredients

1 tube of calamari

1 French shallot

½ bulb of garlic

Wedge of a lemon

2 bay leaves

1sp coriander seeds

Salt

1 + ¾ Extra virgin olive oil (or enough oil to fully submerge)

Preheat oven to 140deg

An alternative method of making confit that achieves the same great results!

Method

Place all aromats in a shallow baking dish. Add squid pieces. Submerge with olive oil. Cook for 25 – 30 minutes.
