Spelt Spirals with Cabbage and Potato

Ingredients

250g packet San Remo Spelt Spirals
½ savoy cabbage, shredded
1 large potato, diced
1 small onion, thinly sliced
¼ cup sage leaves
1 garlic clove, sliced thinly
100g butter
1 cup parmesan, grated
Salt and pepper

Method

Place cabbage and potatoes into a pot, add boiling water to cover and half of the butter. Season with salt and pepper.

Lower heat to a simmer and cook, covered, for 15 minutes or until cabbage is tender and potato is almost disintegrating.

In a large pot of salted water, add the pasta and cook for half the required cooking time (about 4 minutes). Remove from the water and add to the pot with the potatoes and cabbage.

In a small frypan, melt remaining butter with sage, garlic and onion and cook until onions are soft. Add a small spoonful of the broth to the onions before taking off the heat.

Ladel the pasta and potatoes into a bowl and top with the onions. To finish, add a generous amount of parmesan to pasta.
