Soy Chocolate Gelato

Cook time 10 minutes (+ overnight freezing)

2 tbsp coconut oil

¾ cup pitted prunes
1 very ripe banana
¼ cup rice malt syrup (gluten free option)
¾ cocoa powder
Pinch cinnamon
¾ cup soy milk (check ingredients to ensure gluten free)
¾ cup coconut cream
Pinch salt

Soy Chocolate Gelato


In a food processor add the oil, prunes, banana, syrup, cinnamon and cocoa powder and blend until a paste forms.

With the motor still running add the soy milk, coconut cream and salt. Once combined, pour into a 1L container and cover with a piece of baking paper then the lid. Freeze overnight to firm up completely.
