Simple Stir-Fry with Asian Greens

Servings 4

Ingredients

500gm Eye Fillet or Rump, finely sliced
2 tbsp sesame oil
2 tbsp grated fresh ginger*
2 cloves sliced garlic*
500gms Asian greens, chopped thru the middle
4 x Spring onions, cut into 4 cm batons
2 tbsp oyster sauce
handful fresh coriander
rice or vermicelli  

optional – 2 tspn cornflour, mix with 1/2 cup water
optional – ½ red chilli, ½ green chilli

Method

Heat sesame oil in a wok or pan over high heat

Add ginger, garlic and chillis (optional) and cook until soft – approx. 1 minute

Add beef and stir-fry for 2-3 minutes or until brown

Add greens to pan with the oyster sauce – you can thicken this by combining 2 tsps. corn flour with ½ cup water

Cook until greens are tender and sauce has thickened

Serve with rice of vermicelli (following cooking instructions on packet) and garnish w fresh Coriander

Tips:

Use Rump if you like meat rare-med rare (also Rump is a budget option), if you prefer well-done then use Eye Fillet.

Most Asian greens are suitable

Purchase a whole piece of meat and slice at home, this guarantees, quality and freshness.

*tubes of these herbs will be fine
