Sicilian Tuna Linguini

Servings 3-4

Ingredients

350g of fresh linguine

3 tbsp olive oil 

1 French shallot, finely chopped

2 cloves garlic, chopped

2 tbsp baby capers, drained

2 tsp Sicilian chilli paste (or any chilli of your choice)

1 tbsp tomato paste

1 x 185g tuna, drained 

6 kalamata, pitted 

3 sprigs of basil, leaves picked and torn

Zest of 1 lemon

Salt and pepper 

¾ cup Parmesan cheese 

Method

Bring a large pot of salted water to the boil.

Heat a large pan on medium heat and add the oil. Sweat off the shallots for a minute then add the garlic, followed by the capers, chilli, and tomato paste. Swirl the pan to fry off for a minute then add the tuna and olives.

Cook pasta as per packet instructions.

Add the pasta and a ladleful of the cooking water. Toss then add the basil, lemon zest, parmesan. Check seasoning and serve.
