Shredded Chicken & Cabbage Salad with Sesame Dressing

Ingredients

Dressing
1 cup black and white sesame seeds, toasted
½ clove garlic, minced
Juice of ¼ of an orange
Pinch sugar
2 tsp soy sauce
2 tsp mirin
1 tsp sake
2 tsp sesame oil
4 tbsp Japanese mayonnaise

1 chicken breast, poached
2 cups Chinese cabbage, shredded
4 spring onions, white parts only, finely sliced
½ an apple, diced

Method

In a mortar and pestle, crush the sesame seeds then pour them into a large bowl. Add the garlic, orange juice and sugar and mix well to form a paste. Add the soy sauce, mirin, sake, sesame oil and mayonnaise and stir to combine. Set aside.

Allow the chicken to cool to room temperature. Shred or “floss” the chicken breast and place in the bowl with the dressing. Add the cabbage, spring onions and apple and with a spoon and fork, toss together to coat everything in the dressing.

Garnish with extra sesame seeds and wakame, if available.
