Scrambled Eggs with Hot Sauce

Ingredients

½ tsp olive oil

1 knob of butter

4 eggs

Pinch of salt 

½ ripe avocado, fanned to serve

1 slice of toasted sourdough

Hot sauce, to serve 

Method

Heat a non-stick pan over a medium heat and then add the butter and a splash of oil. Pour in the eggs and allow it to just set for a few seconds. Use a spatula to scrape around the pan to pull in the set curds from the bottom. Tilt the pan so any uncooked egg can run to one side of the pan and then continue to process in a circular motion to form a rose shape.

Serve eggs with toast, avocado, a good pinch of salt and hot sauce.
