Scrambled Egg Sandwich

Ingredients
2 thick slices of soft white square bread
1 tsp mayonnaise
1 slice of American cheese
1 tsp vegetable oil
2 eggs
½ tsp potato flour mixed with a tablespoon of water
Pinch of salt and pinch of white pepper
Method
Whisk the eggs in a bowl and add in the potato flour slurry, salt and pepper.
Heat the small pan over a medium heat and add oil. Pour the egg mixture into the pan. Scramble with a wooden spoon then swirl egg so it covers the base of the pan. Place cheese on top, remove from the heat and fold egg over to form a square that is the same size as the bread.
Spread mayonnaise on to each side of the bread. Top with egg and top slice of bread. Cut crust off and cut in half. Serve with a traditional Hong Kong milk tea.
