Roasted Prawns with Soy Butter

Ingredients

8 large green king prawns, 

40g unsalted butter, softened

1 tbsp soy sauce

Juice of ½ lemon

2 tbsp capers, chopped

1 long red chilli, seeds removed and finely chopped

Method

Preheat oven to 200°C.

To butterfly the prawns, turn the prawn over, belly side up and hold the prawn firmly with one hand and use kitchen scissors to cut along the belly from the head end down to the tail, cutting through the shell and flesh but not all the way through. Remove the intestinal tract and flatten it.

Place on a baking tray and drizzle with a little olive oil. Roast for 2-3 minutes or until just undercooked. They will continue to cook once out of the oven.

Melt the butter in a saucepan. Once boiling, remove from the heat. Add the soy sauce and mix through.

Arrange prawns on a platter and drizzle soy butter over the top. Add a squeeze of lemon and garnish with capers and chilli.
