Roast Brussels Sprouts with Crispy Bacon

Servings 2-4

Ingredients

400g Brussels sprouts

100g streaky bacon, sliced into batons
1 tsp extra virgin olive oil
Pepper, to taste
Pinch of dried chili flakes (optional)
Handful flat leaf parsley, finely chopped
Handful mint leaves, finely chopped

Method

Preheat the oven to 180°C.

Remove the brown core end of the Brussels sprouts, discard any outer tough leaves and then cut each Brussels sprout in half, lengthways, and place them into a bowl with the bacon.

Add the extra virgin olive oil, pepper and the chilli if using and toss to combine.

Line a baking tray with baking paper, spread the Brussels and bacon out over the tray and roast in the preheated oven for 15-20 minutes or until the Brussels sprouts are golden in colour and the bacon is crispy.

Once cooked, transfer the Brussels sprouts back to the mixing bowl, toss through the herbs and serve.
