Rice Noodles in Hoisin and Peanut Sauce

Ingredients

400g fresh thick-cut rice noodles

Chilli sauce, to garnish 

Toasted sesame seeds, to garnish 

Spring onions, julienned to garnish

3 tbsp peanut butter


Soy and Hoisin Sauce

2 tbsp hoisin sauce 

1 tbsp soy sauce 

1 tsp caster sugar 

1 tsp black vinegar

Method

Make the soy and hoisin sauce by combining the ingredients with 2 tablespoons of boiling water.

Loosen the peanut butter with 2 tablespoons of boiling water until it’s a runny consistency.

Cook the rice noodles as per packet instructions.

Arrange the noodles on a plate and drizzle over hoisin sauce, followed by the peanut sauce and chilli. Garnish with spring onions and sesame seeds.
