Rhubarb and Strawberry Mocktail

Ingredients

Strawberry-Rhubarb compote

1 cup strawberries, hulled and halved

1 cup rhubarb, chopped

½ cup caster sugar

1 cup water

Mocktail

90ml strawberry-rhubarb syrup

Ice cubes

500ml soda water

1 lime, wedges

Method

Add strawberries, rhubarb, sugar, and water to a saucepan. Bring to a gentle simmer over medium heat and cook for 10–15 minutes, stirring occasionally. Set aside to cool completely.

In a glass, add approximately 45ml of the strawberry-rhubarb compote. Add ice and top with soda water. Garnish with lime.
