Red Capsicum Saganaki

Ingredients
4x large red capsicums
50g fetta
1 tbsp chilli flakes
3 tbsp olive oil
Bread, to serve
Salami, to serve
Method
Line the baking tray with foil and add capsicums.
Roast capsicum in a preheated 210°C oven for 35 - 45 minutes.
Once removed from the oven “steam” capsicums by placing them in a bowl and covering them with cling wrap for 10 minutes before peeling carefully.
Add capsicum strips to a baking dish. Top with olive oil, crumble the fetta & chilli flakes. Grill till golden.
Serve with bread and salami.
