Raw Broccoli Salad with Avocado Dressing

Ingredients

1 small head of broccoli

3 spring onions, sliced 

⅓ cup dried cranberries 

⅓ cup pistachios, chopped

1 handful coarsely grated pecorino

Dressing

125g sliced avocado, defrosted

1 tbsp white wine vinegar 

3 tbsp extra virgin olive oil

½ clove garlic

2 small handfuls of parsley and basil, plus extra for the salad 

Salt and pepper  

Method

Using a stick blender, blend all of the dressing ingredients together with ¼ cup of water. 

Peel the stem of the broccoli and finely chop the broccoli into small pieces. Place in a large bowl along with the onions, cranberries, pistachios and dressing. Toss well and garnish with grated pecorino.
