Quinoa, Lentil, Chorizo and Zucchini Salad

Ingredients

½ cup of quinoa, cooked as per packet instructions
1 cup lentils, cooked as per packet instructions
2 chorizo, cut into rounds
1 zucchini, cut into rounds
½ bunch parsley, leaves washed and roughly chopped
½ Spanish onion, finely sliced

Dressing
1 punnet cherry tomatoes, finely diced
1 tbsp capers
1 tbsp sherry vinegar
4 tbsp extra virgin olive oil
Salt and pepper

Method

For the dressing, combine all ingredients together. Heat a large fry pan on medium heat and add the chorizo. Cook on each side until golden brown. Remove from the pan drain on paper towel. Now add the zucchini and cook for 5 minutes or until tender. To assemble the salad combine the quinoa, lentils, chorizo, zucchini, parsley and Spanish onion. Now pour over the dressing and toss well.
