Pumpkin Gratin

Ingredients

1.2kg butternut pumpkin, peel and cut into 3cm pieces 

1 tbsp plain flour 

2 eggs

80ml milk 

Pinch nutmeg 

3 sprigs of sage, leaves picked and chopped 

2 large handful of fresh breadcrumbs

100g cheddar, coarsely grated 

A splash of extra virgin olive oil 

Salt and pepper 

Method

Preheat the oven to 200°C.

Place the pumpkin in a steamer basket and steam until tender. Mash with a fork and season with salt, nutmeg and pepper. Whisk the eggs into the flour, along with the milk. Fold through the cooked pumpkin and spread the mixture into a gratin dish of your choice.

Mix the breadcrumbs, cheese and sage together and sprinkle over the pumpkin. Drizzle with a splash of oil and bake in the oven for 20 - 25 minutes or until golden.
