Prawns with Hot Sauce Mayonnaise

Servings makes 250g of mayonnaise

Ingredients

2 egg yolks, room temperature

1 tbsp white wine vinegar

1 tsp Dijon mustard (optional)

1 cup neutral oil (like sunflower or grapeseed)

Hot sauce, to taste

Salt and pepper

1kg prawns, peeled with tails intact and deveined, to serve

Method

Place the egg yolks in a bowl and whisk in the vinegar and mustard if desired. To ensure the mayonnaise thickens, it is important to pour in the oil very slowly at the beginning. Add a small drizzle of oil and whisk well. Drizzle in a little more oil and continue to whisk. Repeat this process until the mixture thickens and oil is all incorporated. Season with salt and a few generous splashes of hot sauce.

Serve with peeled prawns.
