Prawn, Zucchini, Bacon, Brown Rice Penne

Ingredients

1 packet brown rice penne

50g bacon, finely diced

250g green prawn meat, roughly chopped

1 punnet cherry tomatoes, halved

1 large zucchini, grated

½ cup extra virgin olive oil

2 tbsp crushed garlic

2 tbsp butter

1 lemon, zested & juiced

¼ cup mint leaves

¼ cup flat-leaf parsley

¼ cup grated pecorino

Salt & pepper

Method

In a large pan, heat olive oil on medium heat. Add, garlic, bacon, tomato and cook for 5 minutes.

Next, place the prawn meat into the pan and sauté for 3 to 5 minutes or until prawn meat is cooked.

Add zucchini, lemon zest, juice and reduce heat to a simmer. Cook for a further 2 minutes.

Season with salt and pepper.

Add mint & parsley to the pan and finally strain pasta and toss through the sauce and serve.
