Prawn, Smoked Mussel and Kimchi Rolls

400g cooked prawns, peeled and deveined and cut into 4 pieces

85g can of smoked mussels, oil drained and mussels cut in half

2 tbsp kimchi, finely chopped

¼ cup kewpie mayonnaise

½ lemon, juiced

4 leaves of iceberg lettuce, finely shredded

4 soft American-style hot dog rolls

1 tsp butter, softened

2 tbsp crispy fried shallots

Salt, to taste

Prawn, Smoked Mussel and Kimchi Rolls


Combine the prawns, kimchi, mayonnaise and lemon together in a medium bowl. Check seasoning it may need a little salt.

Heat a frypan over medium heat. Trim both sides of each bread roll horizontally so they have flat sides. Brush with butter and toast in a pan for a minute on each side.

Fill the warm rolls with prawn and mussel mix, lettuce and crispy shallots.
