Potato Potage

Ingredients

4-5 potatoes, peeled and thinly sliced

1 leek, white and light green part diced

1 onion, diced

10g butter

2L chicken stock

2 sprigs thyme

1 bay leaf

Salt & pepper, to taste

Chive, finely chopped, to serve

Olive oil, to serve

Method

Heat a large pot over medium heat. Add the butter, onion and leek and sweat for 8-10 minutes until softened, stirring occasionally.

Add the stock and cook for 5 minutes before adding the potatoes, thyme and bay leaf and cook for a further 10-15 minutes or until potatoes are tender.

Sprinkle chives and drizzle with olive oil to serve.
