Peach, Apple and Mint Balls

Ingredients

¾ cup unsalted macadamia nuts

½ Peach

½ Apple

3 tbs. boiling water

Pinch dried mint

1 tbs. coconut oil

2 tbs. honey

¼ cup lightly toasted desiccated coconut + 1 cup for coating

Method

Place the apples, peaches and mint into a bowl and pour over boiling water. Steep for 2 minutes.

In the bowl of a mini food processor add the macadamias, coconut oil, honey and a ¼ of cup of desiccated coconut. Blitz until a sticky crumb forms. Add the pineapple mix and the water and again.

Using a tablespoon measuring spoon form small portions of the mix and roll with your hands to form balls. Coat in the extra coconut and then chill until firm.
