Overnight Breakfast Oatmeal

Cook Time 10 minutes (+ overnight soaking)

Ingredients

2 cups rolled oats
2 cups oat milk
1 small pear, grated
1 tsp chai spice
Zest and juice of 1 orange
¼ cup almonds, toasted, chopped
¼ cup pistachios, toasted, chopped
¼ cup pepitas, toasted
Toasted coconut flakes, extra oat milk or greek yoghurt, blueberries, orange segments, mint sprigs

Method

In a large bowl, soak oats in oat milk overnight.

Stir pear, chai spice, orange zest and juice, nuts and pepitas through the oatmeal.

Serve oatmeal topped with your choice of coconut flakes, extra oat milk or greek yoghurt, blueberries, orange segments and mint sprigs.
* For warm oatmeal, place oats in a medium saucepan with extra oatmeal milk over medium-low heat and stir until heated. Then stir through pear, chai, etc as above.
