Oven Roasted Tomatoes with Broccolini & Orecchiette

1 pkt San Remo Gnocchi
1 kg cherry truss tomatoes, cut in halve
6 tbsp olive oil
1 garlic clove, chopped finely
1 tbspn dried oregano
1 bunch broccolini, blanched & chopped finely
¼ cup flat leaf parsley, chopped finely
½ cup grated pecorino
Salt & pepper

Oven Roasted Tomatoes with Broccolini & Orecchiette


Preheat the oven at 160c. Put tomatoes, garlic, oregano and half of the olive oil into a bowl and mix together.
Place tomatoes onto a baking tray, with cut side facing up. Bake in oven for 20 to 25 mins.
Cook pasta as per packet directions.
Heat remaining olive oil in a pan on low and add broccolini, tomatoes & parsley. Strain pasta and add to pan. Toss together the ingredients softly.
Add salt & pepper to taste.
Serve with generous amount of pecorino over the top.
