Nut and Seed Crackers

Ingredients

A selection of cheeses, to serve


Crackers

½ cup dried apricots, chopped 

½ cup whole almonds, chopped

½ cashew or walnuts, chopped

¼ cup pumpkin seeds

1 tbsp sesame seeds 

20g flaxseeds 

1 egg white

1 tbsp soy sauce

2 tbsp honey

Method

Preheat the oven to 160°C and line a tray with baking paper.

Combine all of the cracker ingredients into a bowl and combine well.

Using a 6cm cooking cutter, spoon 2 tablespoons of the mixture into the ring and press down.

Bake in the oven for 15-20 minutes or until golden.

Remove from the oven and cool.

Serve as is or fantastic served as a cracker with cheeses.
